Ingredients

  • 2 1/2 cups flour of choice
  • 4 eggs
  • 6 cups chopped fresh kale
  • 1 1/2 cups Irish cream–style half and half (non-alcoholic)
  • 1/4 cup maple syrup or sugar
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
  • Butter for cooking
  • Lucky Charms and whipped cream for garnish

Instructions

  1. Add all pancake ingredients (except butter and toppings) to a blender. Blend until completely smooth and bright green.
  2. Heat butter over medium-low heat. Pour about 1/4 cup batter per pancake.
  3. Flip when bubbles form on the surface. Cook gently, these are thin and delicate.
  4. Stack warm pancakes, top with whipped cream, drizzle with syrup, and sprinkle Lucky Charms for a festive finish.
