Lucky Charms and Kale Pancakes
Festive green kale pancakes blended smooth and topped with Lucky Charms for a fun St. Patrick’s Day breakfast. Lightly sweet, kid-friendly, and secretly packed with leafy greens, perfect for brunch or weekend mornings.
Ingredients
- 2 1/2 cups flour of choice
- 4 eggs
- 6 cups chopped fresh kale
- 1 1/2 cups Irish cream–style half and half (non-alcoholic)
- 1/4 cup maple syrup or sugar
- 2 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp salt
- Butter for cooking
- Lucky Charms and whipped cream for garnish
Instructions
- Add all pancake ingredients (except butter and toppings) to a blender. Blend until completely smooth and bright green.
- Heat butter over medium-low heat. Pour about 1/4 cup batter per pancake.
- Flip when bubbles form on the surface. Cook gently, these are thin and delicate.
- Stack warm pancakes, top with whipped cream, drizzle with syrup, and sprinkle Lucky Charms for a festive finish.
