Fridge cake is one of those desserts I kept coming across without fully understanding what I was looking at. I had seen versions of these chocolate biscuit cakes in videos and while traveling, and they always caught my attention because of what happened when you sliced into them. What looked like a simple chocolate loaf revealed biscuits packed throughout.

As I looked into it, I realized that variations of this type of no-bake biscuit cake appear in different places and under different names. I wanted to try my own version of this simple combination of chocolate, condensed milk and biscuits, with that satisfying contrast between the rich chocolate mixture and the pieces of cookie throughout.

For this version, I used Orange Creme Oreos, which add a subtle citrusy sweetness to the chocolate and make this a fun Halloween treat. But the beauty of fridge cake is that you can change the biscuits to suit your taste, the season or whatever you have on hand. Chocolate sandwich cookies, other flavored Oreos or suitable plain biscuits can all give the cake a different character.

The result is rich and chocolatey, but the texture is what makes it special. This is a biscuit-heavy fridge cake rather than a dense, brownie-like dessert, with pieces of cookie running through every slice. The mixture comes together without an oven, is pressed into a loaf pan and then chilled until firm enough to cut.

It's an easy make-ahead dessert for Halloween parties, gatherings or simply when you want something sweet without turning on the oven. Once you have the basic method down, you can experiment with different biscuits and flavors throughout the year.

Ingredients

  • ½ cup unsalted butter, melted
  • ½ cup sweetened condensed milk
  • 1 cup chocolate chips (about 170 g), or 170 g good-quality chocolate, finely chopped
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 20 Orange Creme Oreos, or biscuits of your choice, quartered or roughly crushed
  • 3 tablespoons warm whole milk, as needed
  • Powdered sugar, for dusting (optional)

Instructions

  1. Lightly grease and line an 8 × 4-inch loaf pan with parchment paper, leaving an overhang to help lift out the cake.
  2. Melt the butter and chocolate chips together gently, stirring until smooth.
  3. Stir in the condensed milk, vanilla extract, and salt until combined.
  4. If the mixture looks grainy or separated, add warm whole milk 1 tablespoon at a time, whisking thoroughly after each addition. Stop when the mixture is smooth and cohesive. Use up to 3 tablespoons as needed.
  5. Add the quartered Oreos and fold until coated. Keep the pieces chunky to give the finished cake plenty of biscuit texture.
  6. Transfer the mixture to the prepared pan. Press it firmly into the corners and smooth the top.
  7. Refrigerate for at least 8 hours, preferably overnight, until firm. Lift the cake from the pan using the parchment overhang. Slice with a sharp knife and dust with powdered sugar and Oreo crumbs, if desired.

Notes

  • Texture: Keep the cookies chunky rather than crushing them into fine crumbs.
  • Separated mixture: Add warm milk 1 tablespoon at a time, stopping as soon as the mixture comes together. You may not need all 3 tablespoons.
  • Biscuit swaps: Use sturdy biscuits or sandwich cookies. Sweetness and texture will vary.
  • Storage: Refrigerate covered for 5–7 days.
  • Freezing: Freeze well-wrapped individual slices for 2–3 months. Thaw in the refrigerator before serving.
  • Choosing chocolate: Use good-quality semi-sweet or dark chocolate (50–60% cacao) to balance the sweetness of the condensed milk and cookies.
